Origin and plantationYemen coffees are mostly sun-dried. The beans are spread out on the stone roofs of the nearby mud houses. The coffee cherries absorb the moisture from the houses, giving them an earthy profile. The beans are separated from the cherries with traditional millstones and then mixed with traditional spices. Yemen coffee is in high demand, but can only be obtained in small quantities. The government and the Office of Agriculture are therefore working to increase production. They plan to develop new cultivation methods, modern irrigation and protected areas for old and young trees.Character and tasteThis aromatically fragrant coffee has wild, exotic notes of black cherry, cinnamon and chocolate, which harmonise with a pleasant acidity. This creamy cup is perfected by a long-lasting, clean finish with a lemony acidity.
