Gyokuro, also called 'precious dew', is by far the best tea variety in Japan. Some tea connoisseurs even call it the best green tea in the world. It is cultivated with the greatest care. About three weeks before harvesting, the entire plantation is covered with reed mats or dark nets. The leaves, which thus develop in the dark, have a higher chlorophyll content. This gives them a dark green colour and a lower tannin content. This makes the taste particularly aromatic and mild. This shade tea is harvested only once a year, only the bud and, if quality permits, the first leaf. In Japan, Gyokuro is only served to honourable guests. In Europe, too, it has become one of the most precious teas.
